Characterization of freeze dried powder of Bangladesh’s native citrus fruits by-products: An approach of functional and nutritional quality attributes
Citrus plants belonging to the family of Rutaceae which include fruits such as orange, mandarin, lemon, sour orange and grapefruit which are promising source of multiple beneficial nutrients for human beings. Commonly citrus fruits are subjected to industrial processes, mainly for the production of their juices which utilizes only 45% of total fruit weight, thus it generates a large amount of processing waste. Especially in developing countries, this is often thrown into landfills or rivers, causing environmental pollution or contamination of water, with depletion of dissolved oxygen levels which may create a significant environmental pollution risk. The conversion of the by-products into raw materials of food product development is crucial need for the next generation. The objectives of the study:
To investigate the functional properties and nutritional quality attributes of different citrus fruits by-products (peel and pomace) powder.
To assess and compare the quality attributes among the citrus fruit cultivars to identify the best suited cultivars.
